Poached eggs in tomato sauce


Quick and very tasty recipe

Ingredients:

Must haves:

Eggs

Tomato paste

Salt/Chilli

Nice to haves:

Onions, garlic

Peppers (fresh or dried)

Salted herbs

Slices of melting cheese

Procedure:

Prepare tomato sauce first, fry chopped onion/garlic and chilli in a little bit of oil. Add tomato paste and dilute with water. Add dried peppers and/or salted basil and boil a couple of minutes. Crack the eggs into the tomato sauce, cover and lower the heat. Simmer for 4 min to get perfectly poached eggs. If you have melting cheese, add couple of slices on top one minute before finishing and cover again. Serve with bread or knackerbrod.
